Now, I do love kimchi. I know cabbage kimchi very well, but I’m going to have to try this cucumber kimchi for sure:

    Somebody made me a kimchi that used whey. I didn’t think it was very good. Whatever the style is that they sell in jugs in the Asian grocery, that’s the kind I like.

    PS – How do you tell when the kimchi has gone bad?

    It doesn’t, really. When it goes “sour”, by the term of my Korean lady who makes mine, you use it to make pancakes. Or soup. Bunches of stuff. I usually eat my gallon before that time, so I’ve never had to try to save it.
